Hokkaido is Japan at its wildest. Winters mean powder-perfect skiing in Niseko and Rusutsu, followed by hot-spring onsens in the forest. Summers open up the lavender fields of Furano, wildlife safaris on the Shiretoko Peninsula, and long white-linen lunches in the countryside. Sapporo — Hokkaido's capital — is a beautifully liveable city of seafood markets, whisky bars, ramen alleys and the annual Snow Festival, when the streets fill with hand-carved ice sculptures.
